BBQ Shredded Pork with mashed-up potatoes & cauliflower

Pork roast leftovers transition into shredded BBQ pork with chunky mashed potatoes and cauliflower. To make this recipe work, we assume there is 1½ lb. pork, 1 lb. potatoes, and 8 oz. cauliflower left over.

Instructions

Heat pork and barbecue sauce in a saucepan over medium-high to a boil, then reduce heat to low and simmer until warmed through.

Heat broth in a separate saucepan over medium-high; add potatoes and cauliflower and cook until very tender, 5 minutes. Mash potato mixture with a potato masher, or beat with a hand mixer, until desired consistency.

Off heat, stir in sour cream, scallions, butter, and horseradish; season with salt and pepper.

Serve BBQ pork over mashed potato mixture.
