Though it may be tempting to dive into grilled foods the minute they leave the flames, it's important to allow grilled meats and poultry to "rest" before carving or serving. Transfer grilled meat to a platter or plate and allow it to sit for 3 minutes per pound. The meat will continue to cook slightly by means of residual heat and the juices will redistribute throughout the flesh, making the meat more tender and juicy.
