How to Shuck Oysters

Almost all oyster preparations require shucking. Before starting, give them a good scrub with a stiff brush under cold running water to remove grit.

1) Hold the oyster in a shucking glove or towel (to protect your hand) with the hinge facing you.

2) Insert an oyster knife between the shells, near the hinge, and carefully push it into the oyster with force.

3) Twist the knife, like you would a door knob, to pop open the shell completely.

4) Slide the knife above and under the oyster to cut the muscle. Open and discard the top shell.
