Baking powder doesn’t last forever and it's important to test it before using it to make sure it will active properly.
If you’re not sure how old your baking powder is, drop a generous pinch into a little bit of warm water. If it fizzes or bubbles, it’s still good to use. If it sinks to the bottom of the cup, toss it. It’s past its prime.
