If you're not a big fan of blue cheese or are just looking to dip your toe in the water, Cambozola — a blend of Camembert and Gorgonzola — is a milder, creamier option.

Instructions

Cook potato slices in boiling salted water until tender, about 10 minutes; drain and transfer to a large bowl.

Sauté bacon in a nonstick skillet over medium-high heat until crisp. Transfer bacon to a paper-towel-lined plate; pour off all but 2 Tbsp. of drippings. Add shallot to skillet; sauté over medium heat until soft, 3 minutes.

Stir in vinegar, oil, sugar, and Dijon, and season with salt and pepper; simmer 1 minute. Pour dressing over potatoes in bowl.

Add blue cheese, scallions, and reserved bacon; toss gently to coat. Season potato salad with salt and pepper; serve warm or room temperature.
