Cheddar Mashed Potatoes with Bacon

Ingredients

Greek yogurt is strained before it's packaged to remove some of the excess whey. It's creamier and thicker than other types of yogurt.

Instructions

Sauté bacon in a skillet until crisp; drain on paper towels.

Cook potatoes in a pot of boiling water, covered, until tender, 1215 minutes; drain. Return potatoes to the pot; stir over medium heat to remove excess moisture, about 1 minute. Remove pot from heat; add milk, yogurt, and salt. Mash potatoes until smooth.

Stir in 2 Tbsp. Cheddar and bacon. Garnish potatoes with remaining 1 Tbsp. Cheddar and scallions.
