Shrimp Skewers with cilantro pesto

Southerners have been making shrimp and grits for generations. These Shrimp Skewers are an interpretation of that dish that brings together spicy shrimp, pesto, and polenta.

Shrimp is a natural on the grill — it cooks quickly and adapts to almost any seasoning thrown at it. And while this pesto is a departure from the usual basil pesto, its fresh flavors perfectly tie this dish together.

Preheat grill to medium-high. Brush grill grate with oil.

Combine ¼ cup oil, garlic, pepper flakes, paprika, and zest; season with salt. Add shrimp and toss to coat; marinate about 5 minutes.

Meanwhile, purée cilantro, remaining ½ cup oil, heavy cream, and lime juice in a food processor for the pesto; season with salt.

Thread 4 shrimp onto each of 4 skewers through both the tail and the head to hold in place. Reserve marinade for basting.

Grill skewers, covered, 1½ minutes per side, brushing with marinade as they grill. Serve skewers with cilantro pesto.

To devein shrimp, slice along the back to expose the vein; remove it with the tip of a knife.

To help keep the pesto from separating, add the oil in a slow, steady stream while processing.
