Lime-Marinated Flank Steak Tacos
Even if you’re short on time, this meal’s natural simplicity and do-ahead preparation puts it on the “A” list. Although it’s easy, don’t be fooled — there’s still plenty of flavor and appeal
Grill it quickly over high heat for the best tenderness and flavor.
Combine lime juice, garlic, oil, salt, and pepper for marinade in a large resealable bag. Add steak to bag; seal bag and refrigerate for 15 minutes or up to 4 hours to marinate steak.
Prepare grill for indirect grilling, heating one side to high heat and keeping the other side unlit. Remove steak from marinade; discard marinade. Grill steak over high heat, covered, for 3–4 minutes per side for medium-rare. Wrap tortillas in a damp towel; wrap towel with aluminum foil. Place tortilla packet over unlit side of grill during last 3 minutes of grilling steak.
Remove steak and tortilla packet from grill. Let steak rest 5 minutes, then cut meat into thin slices against the grain, cutting on the bias.
Divide steak slices evenly between tortillas. Top each taco with about 1/4 cup of Mango Guacamole.
Remove steak from marinade; discard marinade. Grill steak, covered, for 3–4 minutes per side. Flip steak and finish grilling.
Wrap tortillas loosely in a damp towel; then wrap in foil. Place packet on unlit side of grill. The heat from the other side of the grill will steam the tortillas, making them pliable.
Slice the steak against the grain into tender, thin pieces. Divide steak slices evenly between tortillas.
