Herb-Crusted Pork Loin with Parmesan & Garlic

Instructions

Preheat oven to 400°. Coat a baking sheet with nonstick spray.

Combine panko, Parmesan, sage, and parsley and transfer to a baking sheet.

Pat pork dry with paper towels. Cut several small slits into top and sides of pork and insert a garlic slice into each; season pork with salt and pepper.

Heat oil in a sauté pan over medium-high; add pork and brown on all sides, 6 minutes. Transfer pork, fat side up, to baking sheet with panko mixture.

Coat pork, including ends, with mayonnaise; roll in crumb mixture, pressing to adhere.

Transfer pork to prepared baking sheet and roast until a thermometer inserted into the center registers 145°, 3540 minutes.

Tent pork with foil; let rest 10 minutes before slicing.
