Find the Chinese-style tofu, best for this recipe, packed in tubs of water (not aseptic packages) in the produce or organic section of the grocery store.

Instructions

For the marinade, combine oil, vinegar, lemon juice, tamari, oregano, rosemary, and garlic in a bowl. Season marinade with salt and pepper; transfer to a shallow dish.

Cut tofu into 4 thin slices and press with paper towels to absorb excess moisture. Microwave tofu on a paper-towel-lined plate 3 minutes at 50-percent power to dry. Place tofu in marinade, spoon marinade over the top, and cover. Marinate tofu 1 hour (or up to 24 in the refrigerator), turning periodically.

Preheat grill or a grill pan to medium-high. Brush grill grate with oil. Remove tofu from marinade and grill, covered, until crisp, about 3 minutes per side.

For the salad, combine cucumber, tomatoes, onion, pepperoncini, oregano, lemon juice, and oil; season with salt and pepper. Serve steaks with salad and Pita Wedges.
