Giardiniera-Tip

Italian for “gardener,” giardiniera [jahr-dee-NYAY-rah] are slightly spicy pickled vegetables—often carrots, peppers, cauliflower, and onions. Look for giardiniera in the pickle aisle or specialty product section of your grocery store, or in an Italian market.

Instructions

Preheat oven to 400°.

Chop olives, giardiniera, and oil for the relish in a food processor.

Brush cut sides of focaccia with vinegar and sprinkle with oregano.

Layer meats and cheese on bottom half of bread; top with relish and other bread half. Wrap sandwich in foil and bake until heated through, about 30 minutes.

Slice sandwich into quarters, then cut each quarter in half diagonally.

For ease and an even consistency, use a food processor to chop the olives and giardiniera.
