Fizzy Chicken with Rice & Lemon Vinaigrette
This chicken simmers in club soda with pop and fizz that’s as fun to watch in the pan as it is to eat off the plate. The club soda isn't just for cool effects, but it forms a light glaze over the chicken as it cooks.
Combine lemon juice, chives, honey, and Dijon in a bowl. Drizzle in 2 Tbsp. oil, whisking constantly until mixture is thoroughly combined. Set aside.
Cook rice according to package directions. Trim chicken breasts, then season with salt and pepper.
Dredge chicken in flour; sauté in 1 Tbsp. oil in a large skillet over medium high heat until golden, about 2 minutes. Flip chicken; sauté for 1 more minute.
Deglaze pan with club soda, reduce heat to medium, and add 1½ tsp. butter and pepper flakes. Cover and simmer until liquid is syrupy, about 5 minutes; turning chicken to coat. Keep chicken warm over low heat.
Combine cooked rice with Parmesan, cream, and 1½ tsp. butter. Serve chicken breasts with lemon vinaigrette, Parmesan rice, and Vegetable Melange.
Drizzle the oil for the vinaigrette into the lemon mixture, whisking constantly until emulsified.
Dredge the chicken in plenty of flour; as it sautés it forms a crust and thickens the soda into a glaze.
Deglaze the pan with club soda to loosen the crust on the bottom. Simmer until sauce is syrupy.
