Instructions

Cook carrot, fennel bulb, and garlic in oil in a sauté pan over medium heat until browned, 5 minutes. Add tomatoes, water, wine, olives, capers, zest, lemon juice, salt, and pepper flakes; simmer until reduced by half, 10 minutes.

Add cod, cover pan, and poach over low heat until firm, 810 minutes. Transfer cod to shallow serving bowls. Pour crazy water over servings and top with fennel fronds.

Cut stalks from the fennel bulb. Trim root end from bulb, then halve bulb and core it before dicing.

So good I’ve done this recipe several times now always a crowd pleaser I’ve used fresh rockfish and halibut both were so tasty I serve it all over a big bed of rice on a platter mmmmm can’t wait till next time
