Sweet Christmas Corn
This Sweet Christmas Corn can be gifted as a homemade present this holiday. Add different variations to the mix, like chocolates or pretzels to make the gift a little more magical.
OFF HEAT, WHISK IN:
To avoid crystallizing caramel, don't scrape sides or bottom of saucepan.
Preheat oven to 275°.
Combine brown sugar, butter, and syrup in a medium saucepan over medium heat; stir until butter melts. Bring mixture to a boil and cook 5 minutes.
Off heat, whisk in salt, vanilla, and baking soda.
Pour caramel over popcorn in a large nonstick roasting pan and stir to coat.
Bake caramel corn 15 minutes, stir, and bake 15 minutes. Stir caramel corn and bake until set, 5–8 minutes more. Spread caramel corn onto a large sheet of aluminum foil to cool. Once cool, store in airtight containers.
When you add the baking soda, the caramel will bubble and froth — keep whisking and it will diminish.
The caramel has a tendency to pool on the bottom of the pan, so stir from the bottom to distribute it.
