Margarita Chicken Wings

These margarita chicken wings will add a fresh, Mexican twist to your next party or bowl game. The margarita brine gives the wings a deep flavor, with the sweetness of Triple Sec. After frying them to perfection, the wings are dipped in a buttery agave hot sauce, and served with lime crema. Moist and flavorful, this recipe is a hit at any fiesta.

You will get good results brining the wings for 3 hours, but even better results at 24. Any longer, though, and the wings will turn mushy and be too salty.

Instructions

For the wings, whisk together water and salt until salt dissolves. Whisk in tequila, Triple Sec, and lime juice, then add ice; transfer to a resealable plastic bag. Add wings, seal, and chill at least 3 hours, or overnight.

For the crema, whisk together crema, lime juice, jalapeño, cilantro, scallions, and zest; season with salt and chill until ready to serve.

For the hot sauce, melt butter in a saucepan over medium heat. Stir in Mexican hot sauce, agave, and lime juice; season with salt and keep warm over low heat.

Preheat oven to 300°. Line a baking sheet with foil.

Heat oil in a cast-iron skillet to 360° over medium-high. Remove wings from marinade and pat dry with paper towels. Add wings to skillet (about 10 at a time) and fry until brown, 45 minutes. Toss wings with agave hot sauce, transfer to prepared baking sheet, and keep warm in oven. Repeat process with remaining wings.

Serve wings with lime crema.
