  Makes: About 4 cups Total Time: 15 Minutes Rating: Easy  
1/4   cup fresh orange juice
1/3   cup dried apricots, snipped
2   navel oranges, peeled, thinly sliced
1   Granny Smith apple, cored, diced
1   banana, peeled, sliced
2   T. chopped fresh mint
1   t. sugar
   Juice of 1/2 lime
   Pinch of salt

Warm juice in a saucepan over medium heat. Add apricots, remmove from heat, and let stand until soft, about 10 minutes. Meanwhile, prepapre the fruit.

Pour juice and apricots over prepared fruit; toss with mint, sugar, lime juice, and salt. Serve immediately.
