  Makes: 4 Cups Total Time: 45 Minutes Rating: Easy  

Saute in 1 T. Olive Oil:
1 cup onion, chopped
1 t. garlic, minced

Add:
1 cup sugar
3/4 cup cider vinegar
1/4 cup balsamic vinegar
1 T. lime juice

Add and Simmer:
1 bag (12-oz.) fresh cranberries
1 cup red apple with peel, cored, chopped
1/2 cup golden raisins
1/2 cup dried apricots, chopped
2 t. fresh ginger, chopped
2 whole cloves
1 t. red pepper flakes
1/2 t. kosher salt
Zest of 1 lime


Saute onions and garlic in oil over medium-high heat until onions are translucent, 5 minutes.

Add the sugar, vinegars, and lime juice. Cook until the sugar dissolves, about 5 more minutes.

Add the fruit, ginger, seasonings, and lime zest. Reduce heat and simmer for 15–20 minutes, stirring often.
