Issue 37 - Cinnamon-Raisin Bread

For Cinnamon-Raisin Bread, raisins are kneaded into the dough right after mixing. To make only one loaf with raisins, mix one cup raisins into half the dough.

Before Mixing Dough—
Soak:
2 cups raisins
2 cups warm water

Soak raisins in water 15 minutes to plump them. Meanwhile mix the dough. After soaking, drain and press water from the raisins. When mixing is complete, gently knead raisins into the dough (with a mixer or by hand) until evenly distributed. Let rise and proceed according to directions, adding the cinnamon filling before shaping the loaves.
