Issue 37 - Basmati Rice with Peas

Makes 2 Cups
Total Time: 20–25 Minutes

Bring to a Boil; Cook:
2 cups water
1 cup basmati rice, rinsed
Pinch salt

Off Heat, Add:
3/4 cup frozen green peas

Bring water, rice, and salt to a boil in a large heavy saucepan over high heat. Cook 5 minutes, or until most of water has evaporated and small craters form on top of the rice. Reduce heat to low, cover, and continue cooking 15 minutes, or until rice is done.

Off heat, add frozen peas; cover and let stand 5 minutes. Fluff rice gently with a fork. Serve with Indian-style sea bass and Apple-Coconut Raita.
