Spicy Stuffed Clams
Stuffed clams are a fun, bite-sized appetizer, perfect for a crowd, and for an al fresco entertaining menu. The clam shells make a natural baking and serving vessel. Scallions, parsley and Grana Padano flavor these clams and the addition of hot pickled cherry peppers add spiciness.

Instructions
Preheat oven to 425°.
Set clams on a baking sheet.
Combine panko, scallions, cheese, cherry peppers, parsley, and salt in a bowl; drizzle with 2 Tbsp. oil and toss again to make a moist stuffing.
Press some stuffing over each clam, dividing evenly and leaving a couple tablespoons in the bowl.
Combine reserved stuffing, brine, and wine; pour into bottom of baking sheet, and add reserved clam juice. Drizzle clams with remaining 2 Tbsp. oil.
Bake clams until stuffing is crisp and golden, 15–18 minutes; serve hot or at room temperature.
